The second purpose of the dogear picket is to help the appearance of the fence as the fence runs inclines and declines in the fence row.  What I mean is that it is an optical illusion for the pickets to appear in a smoother line while climbing a hill.  A squared off board will show offsets when climbing a hill, where as your eye will fill in the gap on the pickets appearing as a much cleaner line.

So many picket fences have been built using the dog eared picket that customers are looking for a different look for their fence topping.  Thus the rounded dog ear (curved top) also known as the gothic picket top. The same optical illusion appears here so this is a great choice to use when negotiating multiple grades in a back yard.
